Orange Marmalade Cake with Chocolate Ganache
Bake two 9 inch round golden vanilla cakes (I used a box mix to keep things simple but of course you can bake it from scratch) and let them cool.
Warm about 1 cup (enough to put between your cake layers) orange marmalade until soft.
Beginning in the middle, ladle small amounts of the warm marmalade on the flat side of the bottom layer of your cake...
...gently spreading to the edges...
Place the second layer on top with the round side facing up. Leave it while you prepare the ganache.
Make your chocolate ganache (sounds fancy but easy to make). You need 2/3 cup heavy whipping cream and 6 oz. of chocolate (I used some milk and some semi-sweet, you can use whatever you prefer).
Combine in a pot and heat on very low, stirring frequently.
Be sure all the chocolate melts completely.
Spoon the ganache over the center of your cake...
...letting it drizzle down the sides.
You can see the thin layer of marmalade and silky ganache...
...the slightly bitter chunks of marmalade a nice contrast to the slightly sweet and smooth chocolate and moist cake. Pretty and oh so good!

Looks decadent. My Mom always made candied orange peel dipped in chocolate at Christmas. She was a great cook and we always had a wide variety of sweets to choose from throughout the holiday. And yes, I do like the flavours of orange and chocolate together. - Margy
