Easy Summer Pasta Salad



This is an easy pasta salad that makes a delightful cool and light summer lunch or dinner. 

Easy Summer Pasta Salad

Ingredients:
1 lb cooked, warm pasta noodles (I used tri-color rotini, but use whatever you prefer)
4 small cans of solid white tuna in water, squeezed
 1 cup cherry tomatoes, halved
3 stalks of chopped celery
1 shredded carrot
1/2 bag of frozen peas thawed in water
1/2 cup grated Parmesan cheese
1 bottle Ken's Lite Caesar dressing
Handful of spinach and arugula

Directions:
Mix all the ingredients in with the warm (not hot) pasta (this will help all the flavors meld).   Place the mixed pasta salad into the refrigerator for at least 2 hours but overnight is best.  When ready to serve, put some of the spinach and arugula on the bottom of your bowl, spoon some pasta on top and serve. 

Doesn't get easier than that!  Well it does actually, because you can use any type of vegetable you like (I do think the peas add something to it).

We enjoyed this salad today for lunch with our friend Wayne, who arrived here at the cabin for a short vacation.  So easy to prepare and leaves lots of time to visit with good friends!
