Our First Dandlelion Salad of the Season

Today has been one of those days...going from dawn to dusk, accomplishing much and expending a great deal of energy.  I have much I want to share about today, but it will have to wait until tomorrow, as my muscles are sore and my body is tired and my brain is lagging.

I would like to share one of my photos from our adventures today...beautiful dew drops on a blade of grass that I happened upon while collecting horse manure, but again, I will share more about that tomorrow. 

After a long working day, it was really exciting to have our very first fresh dandelion salad this evening (the only fresh part of our dinner because the accompaniment was leftover pieces of pizza that I reheated...that might give you some indication of how pooped [ha ha, pun intended, today was all about manure] I am this evening!).  This is one of our very favorite greens...a little bitter, full of early spring tenderness right now, and the buds and flowers add a lovely crunchy texture...just add a little balsamic vinegar, extra virgin olive oil, salt & pepper, and voila...deliciousness!   
I should add that you don't want to pick dandelions that have been sprayed with weed killer, but if you've never tried these delightful greens, I highly recommend them.  A very healthy and delightful choice!
