Lise's Flaky Nutella Logs
Ingredients:
1 package filo dough (keep this in the refrigerator until all the other ingredients are prepared and ready for assembly)
4 oz cream cheese, softened
2/3 cup powdered sugar
1/2 cup nutella, softened (it's a chocolate and hazelnut spread)
1/2 cup melted butter with basting brush
cocoa powder with a sifter
flour to dust work area
Mix your powdered sugar and cream cheese until smooth, then add the nutella and mix completely until your mixture looks like this.
Have a cookie sheet with parchment paper ready near your work area. Have your nutella mixture and your butter there as well. Now you can open your filo dough (filo dries very quickly, so you want to remove only the sheets you will be working with, and re-roll the rest back into the wax paper it comes wrapped in to keep it from drying out; some people say to put a wet paper towel over it, but I find that makes it gooey). Unroll 2 sheets, lay them on your slightly floured work area and lightly brush the top one with melted butter.
Using a spoon, randomly drizzle your nutella mixture over the buttered filo sheets; you are going to be rolling this up into a log, so you want to have the nutella be placed around enough that when you roll it, there will be nutella throughout the log. You also will want to save a little of the nutella mixture for drizzling over the top once they are all assembled.
Now roll it into a log, crimp the ends a bit and place it on your cookie sheet.
Follow these same steps until you have used all the filo dough sheets (since we are using 2 sheets per log, you will have 8 logs, as the package has 16 sheets). Once you have them all assembled, brush the logs with butter (be sure to get the ends), sift some cocoa powder over the tops, then drizzle the remaining nutella mixture...you can see I dropped it onto the logs in clumps on the right, but I became more free handed (less controlled) with a bit of a twirling motion with the ones on the left and you can see a lighter drizzling (as a result I ended up with little splatters of nutella mixture all about me and the surrounding area).
Put the tray into a 350 degree oven for about 7 - 9 minutes. Once the edges have browned, turn the oven off and leave the tray in the warm oven for 2 more minutes, then remove the tray to cool.
Luscious crispy, flaky, nutella-y, cookies shaped like logs!
Cut one in half to plate it, sprinkle a little cocoa powder, and you have a lovely desert! Or you can cut it into bit sized pieces, like I did when I brought our friend Bertie some for her birthday today!
It would be good with a scoop of ice cream next to it...I don't eat ice cream, it doesn't like me, but you might want to consider it!
